This year I asked Josh what he’d like for his birthday dinner.  He said he didn’t care as long as I made Sweet Red Pepper soup.

Several years ago the kids and I started doing a Christmas Eve dinner with various friends who for whatever reason either had nothing better to do or didn’t want to see their own families, or couldn’t or whatever.  Long story short, Christmas Eve generally ends up with us and close friends drinking wine and playing Win, Lose or Draw and Cards Against Humanity (a newer tradition…) after having a lovely meal. Homemade Salted Caramel

Homemade salted CaramelFor some reason I became weirdly obsessed with making a cookie with salted caramel in it.  I looked around for some recipes and most of them used store bought caramels.  Which I do love… however… Just always think homemade is tastier.

Okay, so this is late.  And I’m a nerd.  Pi Day is supposed to be to celebrate the mathematical constant Pi or π.  However, it IS a pretty good excuse to just have pie.  And I WAS in Math Club, so it’s all good.  Although at Math competitions we just got donuts.  No pie.  The heathens!

Marc Thomas was diagnosed as diabetic last year and so I’ve tried to do some low or non sugar stuff. My sister is a vegan and my niece a vegetarian so I take that into consideration at times.  And my daughter is lactose intolerant (which means she TRIES not to eat it as it’s not great for her but still sometimes does….)  ANYWAY, I’ve been making these cookies for years and they are scrumptious.  Needless to say, the full fat omnivore version is the tastiest (IN MY OPINION) however, they are very good with substitutions… Continue reading
