When I was a kid, my mother used to make butter tarts at Christmas.. little tiny fancy tarts which I found quite delicious. My mother used currants and that is the way I had always had them.
When I met my (former) husband, he mentioned his love of the tarts, so I made attempts to make them the way he liked them.

Marc Thomas was diagnosed as diabetic last year and so I’ve tried to do some low or non sugar stuff. My sister is a vegan and my niece a vegetarian so I take that into consideration at times. And my daughter is lactose intolerant (which means she TRIES not to eat it as it’s not great for her but still sometimes does….) ANYWAY, I’ve been making these cookies for years and they are scrumptious.
