We were at the Farmer’s Market on the weekend and found some lovely fresh rhubarb…. so of course pie must be made!

My mother is a pie expert.  I’ve probably told you this before, but she made pie a LOT … seemed like every day.. after all, Dad needed his breakfast pie.. not to mention lunch and dinner pie… but then he got the high cholesterol and all that pie eating came to an end.  Good thing as I think my mother was getting awfully tired ….but I digress. Blueberry Pie

Well hello there Blueberry pie….

We bought a lot of blueberries, so I made some pie….

Blueberry pie has always been one of my favourites since I was a kid.  I think because it wasn’t a frequent type of pie that we had… my mother made a lot of apple pies…

Anyway.. made some pie.  I had to kind of fool around with this… last time I made a berry pie it was a wee bit runny… my rule of thumb is basically 1 tbsp cornstarch for each cup of berries.. seems to do the trick.  It was delicious. Just saying. Continue reading

Pie Crust

Beth the Baker - PiesAs I’ve mentioned, my Grandmother had a huge influence on my cooking.. But then again, so did my mother.  Particularly the art of the pie crust.

My mother baked pretty much every day when I was growing up as my father had a fondness for dessert with every meal.  He even had one of those triangular Tupperware containers in order to take his “lunch pie”.  Breakfast pie, lunch pie,  then pie for dessert after supper.  Not to mention his evening snack of ice cream…. You think he’d be a large man, but no, he was very active and likely has a great metabolism… which I did not inherit. Continue reading
