So I got into my head re: chocolate chip cookies with caramel in them and this is what happened.
I made the cookies using shortening and margarine and butter. Because I was filling the cookies with caramel, I used shortening as it has a higher melting point so I thought it would hold the caramel better. Cookies were good, however…. RE-made with butter and they are much better (because I love butter.) Use whichever suits you! I’ve tweaked the recipe… this is the best version yet. Continue reading →
So I decided to make some cookies. For some reason I became somewhat obsessed with putting caramel into cookies and wanted to try some stuff… and… ended up making a boatload of cookies.
These ones are chocolate chocolate chip with caramel inside and sea salt. I made these using “golden shortening”… in the States they call it butter flavoured, but in Canada you can’t say that. Blah blah blah. Continue reading →

Marc Thomas was diagnosed as diabetic last year and so I’ve tried to do some low or non sugar stuff. My sister is a vegan and my niece a vegetarian so I take that into consideration at times. And my daughter is lactose intolerant (which means she TRIES not to eat it as it’s not great for her but still sometimes does….) ANYWAY, I’ve been making these cookies for years and they are scrumptious. I have not made these cookies in YEARS… I used to make them when Katy was young. Don’t even remember where I got the recipe. Out of the paper, I think, but then changed it to suit our tastes.
I remember putting it aside as it originally had butterscotch chips in it and my husband at the time (that makes it sound like I’ve had a bunch, doesn’t it? All Liz Taylor like and stuff.
