I made the cookies using shortening and margarine and butter. Because I was filling the cookies with caramel, I used shortening as it has a higher melting point so I thought it would hold the caramel better. Cookies were good, however…. RE-made with butter and they are much better (because I love butter.) Use whichever suits you! I’ve tweaked the recipe… this is the best version yet. Continue reading
So I decided to make some cookies. For some reason I became somewhat obsessed with putting caramel into cookies and wanted to try some stuff… and… ended up making a boatload of cookies.
These ones are chocolate chocolate chip with caramel inside and sea salt. I made these using “golden shortening”… in the States they call it butter flavoured, but in Canada you can’t say that. Blah blah blah. Continue reading
One of the things I’m doing with my baking is remaking recipes (sometimes, not all) to be vegetarian or vegan and many of the desserts I’ve modified to be low sugar.
I have a vegetarian niece, a vegan sister, a lactose intolerant daughter and a boyfriend with diabetes. So, in some recipes I’ve offered modifications. THIS is the delicious result of modifications… and I must get them out of my house as soon as possible or I will eat them ALL. Continue reading
