We were at the Farmer’s Market on the weekend and found some lovely fresh rhubarb…. so of course pie must be made!

My mother is a pie expert.  I’ve probably told you this before, but she made pie a LOT … seemed like every day.. after all, Dad needed his breakfast pie.. not to mention lunch and dinner pie… but then he got the high cholesterol and all that pie eating came to an end.  Good thing as I think my mother was getting awfully tired ….but I digress. Well hello there Blueberry pie….

We bought a lot of blueberries, so I made some pie….

Blueberry pie has always been one of my favourites since I was a kid.  I think because it wasn’t a frequent type of pie that we had… my mother made a lot of apple pies…

Anyway.. made some pie.  I had to kind of fool around with this… last time I made a berry pie it was a wee bit runny… my rule of thumb is basically 1 tbsp cornstarch for each cup of berries.. seems to do the trick.  It was delicious. Just saying. Continue reading

Sweet Red Pepper Soup – Josh’s Favourite

This year I asked Josh what he’d like for his birthday dinner.  He said he didn’t care as long as I made Sweet Red Pepper soup.

Several years ago the kids and I started doing a Christmas Eve dinner with various friends who for whatever reason either had nothing better to do or didn’t want to see their own families, or couldn’t or whatever.  Long story short, Christmas Eve generally ends up with us and close friends drinking wine and playing Win, Lose or Draw and Cards Against Humanity (a newer tradition…) after having a lovely meal. Chocolate Chip Cookies (with or without Caramel in the middle)

Chocolate Chip CookiesSo I got into my head re: chocolate chip cookies with caramel in them and this is what happened.

I made the cookies using shortening and margarine and butter.  Because I was filling the cookies with caramel, I used shortening as it has a higher melting point so I thought it would hold the caramel better.  Cookies were good, however…. RE-made with butter and they are much better (because I love butter.)  Use whichever suits you!  I’ve tweaked the recipe… this is the best version yet. Continue reading

So I decided to make some cookies.  For some reason I became somewhat obsessed with putting caramel into cookies and wanted to try some stuff… and… ended up making a boatload of cookies.

These ones are chocolate chocolate chip with caramel inside and sea salt.  I made these using  “golden shortening”… in the States they call it butter flavoured, but in Canada you can’t say that.  Blah blah blah.  Continue reading

Butter Tarts

Butter Tarts - Beth the BakerWhen I was a kid, my mother used to make butter tarts at Christmas.. little tiny fancy tarts which I found quite delicious.  My mother used currants and that is the way I had always had them.

When I met my (former) husband, he mentioned his love of the tarts, so I made attempts to make them the way he liked them.
