One of the things I’m doing with my baking is remaking recipes (sometimes, not all) to be vegetarian or vegan and many of the desserts I’ve modified to be low sugar.
I have a vegetarian niece, a vegan sister, a lactose intolerant daughter and a boyfriend with diabetes. So, in some recipes I’ve offered modifications. THIS is the delicious result of modifications… and I must get them out of my house as soon as possible or I will eat them ALL. Continue reading →
I was looking for a way to use up some buttermilk that I had in the fridge and also wanted to make some healthy, delicious low sugar treats. I took a muffin recipe and pretty much changed out most of the ingredients to come up with this. They were very tasty, the BF enjoyed them… and then of course I had to re-make them as I couldn’t quite recall what I had done in the first place. I’m pretty that way. (Long time saying I have… when someone does something kinda dumb, I will pet their hair and say “you’re pretty… you don’t have to be smart”… to either men or women.. it’s just a joke, don’t get all offended or anything… it’s just something silly I say…. Marc Thomas was diagnosed as diabetic last year and so I’ve tried to do some low or non sugar stuff. My sister is a vegan and my niece a vegetarian so I take that into consideration at times. And my daughter is lactose intolerant (which means she TRIES not to eat it as it’s not great for her but still sometimes does….) ANYWAY, I’ve been making these cookies for years and they are scrumptious. I have not made these cookies in YEARS… I used to make them when Katy was young. Don’t even remember where I got the recipe. Out of the paper, I think, but then changed it to suit our tastes.
I remember putting it aside as it originally had butterscotch chips in it and my husband at the time (that makes it sound like I’ve had a bunch, doesn’t it? All Liz Taylor like and stuff. About 15 years ago (maybe less, like I can remember that far back…) my Aunt Laura came to visit and brought a binder for each of us – me, each of my sisters, and my mother and father. In each binder was some family history.. stories of how my grandparents met (by mail – story later…) some history of our family members along with some copies of old photos (some a little fuzzy..) And my Grandmother’s recipes. The ones my Aunt had, any way. When my Grandmother (Bernice in English, Bronislava or Brona in Lithuanian and Polish) had lived in California, my Aunt wrote down as many recipes as she could.
As I’ve said, I’ve decided to recreate my Grandmother’s recipes. Except the headcheese. Nobody wants that….
Banana bread is something pretty much everyone makes at one time or another due to the fact that EVERYONE at some point ends up with over ripe bananas that they throw into the freezer to “use later” so that they aren’t “wasting”. Also, it is delicious. Continue reading →
The other day I was baking when I realized that I was out of eggs! I was going to run to the corner store to grab some, except I had already put the baking powder in (D’OH!) and needed to act fast. I knew there were a bunch of different “fixes” for the no egg problem… looked them up and thought I’d share! In addition – great way to make recipes vegan by omitting the egg and using margarine instead of butter (when necessary). Continue reading →
One of the (many)foods that I love is cabbage rolls. My Grandmother made delicious cabbage rolls (as does my mother who learned from Grandma). I’ve had other peoples’ cabbage rolls – frozen, others’ homemade…. sorry. None of them are as good as my Grandmother’s. I’ve tasted them with a creamy sauce (meh) and various versions. I just prefer Grandma’s recipe from Lithuania. Continue reading →
