Pickled Asparagus

pickled asparagus

When Marc Thomas and I began dating, he spent a bunch of time in Seattle for work.  He would bring me back lovely presents… like pickled asparagus from Pike’s Market.  We both LOVE pickled asparagus, especially in Caesars.

So it was asparagus season, so we bought a TON on sale at the market to try our hand at pickling.  By WE I mean ME.  The recipe calls for 30 spears, however, we bought the thin ones, so there were more asparagus spears in each jar.  Continue reading

Blueberry Jam

Blueberryjam

For those of you who don’t know, there was a point in my life that I refer to as “when I used to be Martha Stewart…”.  Meaning, I was a stay at home mom, so I often canned – salsa, pickles, different jams, and a kick ass marmalade.  I used to love to can things to give as gifts.  I also sewed clothes and costumes for the kids and made the nieces and nephews teddy bears and pajamas at Christmas time.  Oh, and Christmas stockings for the whole family.

Eventually, I got over this and haven’t busted the sewing machine out for years.  (Oh, I quilted too.) The most “Martha” I get is crafting occasionally (used to be a nearly daily occurrence.  I’m in crafting rehab.)  Continue reading

Chocolate Peanut Butter Cookies

IMG_20150519_122938

People like cookies.  It’s a fact. Even those with gluten issues.  This is a variation of the easiest recipes EVER… the regular recipe has only 3 ingredients, but I decided to chocolate this up a bit… My ex husband has celiac disease and he was coming over to visit the kids and so I made some gluten free cookies AS I AM THE NICEST EX WIFE IN THE WORLD.  Continue reading

Apple Carrot Oatmeal Muffins

Apple Carrot Oatmeal Muffins - Beth the BakerI was looking for a way to use up some buttermilk that I had in the fridge and also wanted to make some healthy, delicious low sugar treats.  I took a muffin recipe and pretty much changed out most of the ingredients to come up with this.  They were very tasty, the BF enjoyed them… and then of course I had to re-make them as I couldn’t quite recall what I had done in the first place.  I’m pretty that way. (Long time saying I have… when someone does something kinda dumb, I will pet their hair and say “you’re pretty… you don’t have to be smart”… to either men or women.. it’s just a joke, don’t get all offended or anything… it’s just something silly I say…. I value smart over pretty any day… but once again, I digress..) Continue reading

Homemade Farmer’s Cheese

Homemade Farmer's CheeseI researched how to make Farmer’s Cheese for my Grandmother’s Cheese Dumpling Recipe. Super simple to make and delicious.  Great for baking or just eating with crackers! TOTALLY making this to use in my next lasagna! It’s slightly different than ricotta, which has cream as well as milk and isn’t quite as dry.. I’ll post that recipe later… Continue reading

The Easiest Peanut Butter Cookies Ever (and Gluten free!)

Peanut Butter Cookies - Beth Warren the BakerFor a very long time (over 45 years) I’ve had a friend who I shall call Ted.  (The reason her name is Ted is that when we were kids, we discussed how if I had been a boy my name would have been Steve and she would have been Ted.  We’ve been friends since we were 5.  We’ve been through a lot together.. many years of school, boyfriends, and all other types of both good and bad times. So for this purpose, she’s Ted.  Although her actual name is Beverlee.)  Continue reading

Caramel Corn

Caramel Corn - Beth Warren the Baker

I primarily do this at Christmas time, but really you can make it whenever.  Usually I make it to give to people that I want to give something to, but we’re not specifically exchanging gifts.  Most of the time I make a big batch and then split it into cello bags tied with ribbon to give to  my favourite servers at the pub and other characters that I just want to be nice to… Continue reading
