Chocolate Chip Cookies (with or without Caramel in the middle)

Chocolate Chip CookiesSo I got into my head re: chocolate chip cookies with caramel in them and this is what happened.

I made the cookies using shortening and margarine and butter.  Because I was filling the cookies with caramel, I used shortening as it has a higher melting point so I thought it would hold the caramel better.  Cookies were good, however…. RE-made with butter and they are much better (because I love butter.)  Use whichever suits you!  I’ve tweaked the recipe… this is the best version yet. Continue reading

So I decided to make some cookies.  For some reason I became somewhat obsessed with putting caramel into cookies and wanted to try some stuff… and… ended up making a boatload of cookies.

These ones are chocolate chocolate chip with caramel inside and sea salt.  I made these using  “golden shortening”… in the States they call it butter flavoured, but in Canada you can’t say that.  Blah blah blah.  Continue reading

Butter Tarts

Butter Tarts - Beth the BakerWhen I was a kid, my mother used to make butter tarts at Christmas.. little tiny fancy tarts which I found quite delicious.  My mother used currants and that is the way I had always had them.

When I met my (former) husband, he mentioned his love of the tarts, so I made attempts to make them the way he liked them.

Okay, so this is late.  And I’m a nerd.  Pi Day is supposed to be to celebrate the mathematical constant Pi or π.  However, it IS a pretty good excuse to just have pie.  And I WAS in Math Club, so it’s all good.  Although at Math competitions we just got donuts.  No pie.  The heathens!

Chocolate Banana Brownies I swear to you, these are delicious.

One of the things I’m doing with my baking is remaking recipes (sometimes, not all) to be vegetarian or vegan and many of the desserts I’ve modified to be low sugar.

I have a vegetarian niece, a vegan sister, a lactose intolerant daughter and a boyfriend with diabetes.  So, in some recipes I’ve offered modifications.  THIS is the delicious result of modifications… and I must get them out of my house as soon as possible or I will eat them ALL.  Continue reading

Banana Cream Pie

Banana Cream PieSo the beautiful and talented Katy Warren is not a big cake fan.  She likes pie.  LOVES pie.  For her birthday, I wasn’t sure what kind of pie to make… so I made two.  Also, I use the word “so” a lot.

Pie Crust

Beth the Baker - PiesAs I’ve mentioned, my Grandmother had a huge influence on my cooking.. But then again, so did my mother.  Particularly the art of the pie crust.

My mother baked pretty much every day when I was growing up as my father had a fondness for dessert with every meal.  He even had one of those triangular Tupperware containers in order to take his “lunch pie”.  Breakfast pie, lunch pie,  then pie for dessert after supper.  Not to mention his evening snack of ice cream…. You think he’d be a large man, but no, he was very active and likely has a great metabolism… which I did not inherit. Continue reading

Marc Thomas was diagnosed as diabetic last year and so I’ve tried to do some low or non sugar stuff. My sister is a vegan and my niece a vegetarian so I take that into consideration at times.  And my daughter is lactose intolerant (which means she TRIES not to eat it as it’s not great for her but still sometimes does….)  ANYWAY, I’ve been making these cookies for years and they are scrumptious.  Needless to say, the full fat omnivore version is the tastiest (IN MY OPINION) however, they are very good with substitutions… Continue reading
