When I was a kid, my mother used to make butter tarts at Christmas.. little tiny fancy tarts which I found quite delicious. My mother used currants and that is the way I had always had them.
When I met my (former) husband, he mentioned his love of the tarts, so I made attempts to make them the way he liked them.

Happy PI Day!
Okay, so this is late. And I’m a nerd. Pi Day is supposed to be to celebrate the mathematical constant Pi or π. However, it IS a pretty good excuse to just have pie. And I WAS in Math Club, so it’s all good. Although at Math competitions we just got donuts. No pie. The heathens!

I swear to you, these are delicious.
One of the things I’m doing with my baking is remaking recipes (sometimes, not all) to be vegetarian or vegan and many of the desserts I’ve modified to be low sugar.
I have a vegetarian niece, a vegan sister, a lactose intolerant daughter and a boyfriend with diabetes. So, in some recipes I’ve offered modifications. THIS is the delicious result of modifications… and I must get them out of my house as soon as possible or I will eat them ALL. Continue reading

So the beautiful and talented Katy Warren is not a big cake fan. She likes pie. LOVES pie. For her birthday, I wasn’t sure what kind of pie to make… so I made two. Also, I use the word “so” a lot.

I was looking for a way to use up some buttermilk that I had in the fridge and also wanted to make some healthy, delicious low sugar treats. I took a muffin recipe and pretty much changed out most of the ingredients to come up with this. They were very tasty, the BF enjoyed them… and then of course I had to re-make them as I couldn’t quite recall what I had done in the first place. I’m pretty that way. (Long time saying I have… when someone does something kinda dumb, I will pet their hair and say “you’re pretty… you don’t have to be smart”… to either men or women.. it’s just a joke, don’t get all offended or anything… it’s just something silly I say…. As I’ve mentioned, my Grandmother had a huge influence on my cooking.. But then again, so did my mother. Particularly the art of the pie crust.
My mother baked pretty much every day when I was growing up as my father had a fondness for dessert with every meal. He even had one of those triangular Tupperware containers in order to take his “lunch pie”. Breakfast pie, lunch pie, then pie for dessert after supper. Not to mention his evening snack of ice cream…. You think he’d be a large man, but no, he was very active and likely has a great metabolism… which I did not inherit. Continue reading
